Biorsaf raises €5.2 million and acquires Cooki for AI food compliance

Italy-based Biorsaf secured €5.2 million led by P101 SGR to merge food safety digitization with artificial intelligence capabilities.

Biorsaf, a Tuscany firm focused on digitizing food safety and quality, raised €5.2 million in new financing. The company also acquired Cooki, a Bologna-based platform managing digital food information. This acquisition creates the first operator capable of delivering a single solution covering every stage of compliance and data management across the food value chain. Processes range from food safety (HACCP) to quality assurance, traceability, nutritional values, cost analysis, and labeling. The round was led by P101 SGR with participation from Maia Ventures, Farming Future, and Toscana Next. Marco Papalini, CEO of Biorsaf, stated the funding and acquisition accelerate growth. He noted in just three years the team built Italy's reference platform for automating food compliance. Papalini described consolidating a highly fragmented market as the next development stage, aiming to put artificial intelligence to work for business efficiency in the food sector. Founded in 2021 in Castell'Azzara (Grosseto), Biorsaf continues to expand its technological offerings.
